I know, I know…I seem to be making overnight oats a lot lately.

From this Strawberry Nutella version, to that Blueberry French Toast version, it’s safe to say that I’m hooked.

Which is funny, because I never really liked oatmeal when I was growing up. I like it more now, but I’m still picky about it. Oatmeal can be so plain, so I need some flavor in mine!

But overnight oats? I love ’em. And love may be an understatement, as I absolutely, 100% adore them, as in, I could eat-them-every-single-day-and-still-not-get-enough-of-them. Weird, right? Mainly because my feelings about oatmeal are a little less strong.

Since I shared this Pumpkin Pie Oatmeal with you last fall (which I really do puffy heart), I decided to switch it up and bit and turn it into these Pumpkin Pie Overnight Oats.

The hardest part is waiting for the oats to chill into a thick and creamy consistency. But, trust me, the wait is worth it!

Ingredients for Pumpkin Overnight Oats

This is an accidentally healthy overnight oats recipe — but it tastes just like pumpkin pie! Here’s what you’ll need to make the pumpkin oats:

  • Old-fashioned oats
  • Milk
  • Pure pumpkin puree
  • Pumpkin pie spice
  • Cinnamon
  • Vanilla bean paste
  • Honey
  • Crushed graham crackers (optional, for topping)

How to Make Overnight Oats

These pumpkin overnight oats are a breeze to make! Simply add all the ingredients to a bowl, stir, then divide between two mason jars (or add to a large Tupperware). Let the oats sit for at least 4 hours, or overnight!

What Are the Best Oats for Overnight Oats?

I recommend using old-fashioned oats (aka rolled oats). Do NOT use quick oats, as they’re much more finely ground. Steel cut oats also won’t work because they’re too chewy.

How Long Do Overnight Oats Last?

If stored in an airtight container in the fridge, these pumpkin pie overnight oats will last up to 5 days.

Tips for Making Pumpkin Spice Overnight Oats

  • The best part is that you can grab these from the fridge and eat them as is. No need to warm them up or pop it in the oven.
  • I like to store my overnight oats in mason jars so that I have an easy, grab ‘n go dish that I can eat during busy weekday mornings.
  • Note that this recipe calls for pure pumpkin puree, NOT pumpkin pie filling. Pumpkin puree is plain, unsweetened pumpkin, whereas pumpkin pie filling has already had sugar and spices added to it.

Ingredients

  • 1 cup old-fashioned oats
  • ¾ cup milk, (any kind)
  • ½ cup pure pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla bean paste, (or use vanilla extract)
  • ½ tablespoon honey, , optional (if you like your oats slightly sweetened)
  • Crushed graham crackers for topping, , if desired

Instructions

  • In a medium bowl, mix together oats, milk, pumpkin, pumpkin pie spice, cinnamon, vanilla, and honey. Pour into two mason jars or an airtight container(s) with lid.

  • Refrigerate for at least 4 hours, or preferably overnight, so that the oats will soften and absorb the liquid.

  • Remove from refrigerator, stir, and top with crushed graham crackers, if desired.
