I've made a version of this for years. My husband says it's one of the reasons he married me! In my recipe, there is no olive oil, and I use lime juice instead of vinegar. Half of the neighborhood now makes this salad as well because I brought it to a potluck, and I was inundated with requests for the recipe.

This salad is even more flavorful and delicious if you substitute the basil for chopped mint.

I liked all the ideas so I made a lime vinaigrette: 2T lime juice, 1t. Honey, 2T Olive oil, chopped mint, salt & pepper. Added some extra chopped mint & basil with the feta before the dressing.

Adding chopped baby arugula gives this a lovely peppery taste. Agree on mint also as another reader commented. It is a very forgiving salad in that it is highly adaptable to different ingredients.

A friend whose family is from Cyprus makes a version of this with just 3 ingredients: halloumi (grilled is even better), watermelon and mint. It’s the most amazing summer dish I’ve ever had.

I use just watermelon, feta and lots of basil - no dressing. I eat this almost every day in the summer. It releases its juice if it's kept in the fridge for a few days, but the juice is delicious and refreshing by itself - salty and sweet at the same time.

I like to use Sherry Vinegar and add some chopped, toasted walnuts for a bit of crunch and a hint of smoky flavor. This is a summer mainstay!

I‘ve been doing this for ages, or at least something similar. I use lime juice. You should definately try it with fresh mint and loads of parsley. And add some nice Kalamata olives for the color. A big hit at any party or potluck.

We loved this and have riffed on it several times this summer. Besides basil, we made it with mint (at the suggestion of one of the other commenters), Thai basil, and a combination of the two. Also tried adding some lime juice. Despite the recipe saying vinegared watermelon won't last well we've found that, while it does lose it's gorgeousness, it's still delicious the next day if you have leftovers to tuck into the fridge. I liked it best when made with a feta that doesn't crumble too small.

Was good and interesting, but not spectacular. Used mint and dark Balsamico. Perhaps a saltier version of feta could help, or an extra sprinkle of maldon salt.

A pint’s a pound the world around. I figure two pounds of watermelon prepped for this salad fills a pair of two-cup measures or reaches the one-quart line in a mixing bowl.
