For our crock pot cream cheese chicken chili you only need a few cans and seasonings, with chicken breasts and you will have a great dinner that everyone will love and enjoy. We even sometimes use it as a tip for tortilla chips. So good.

We will make this for an easy chicken dinner that is a change from the traditional roasted chicken breast recipe and honestly it’s even less work than some of the other chicken breast recipes. Make sure to keep this slow cooker chicken chili ready as football season is coming up too!

Ingredients You Need to Make Our Slow Cooker Cream Cheese Chili Recipe:

  • Boneless, skinless chicken breasts
  • Black beans
  • Undrained corn
  • Rotel tomatoes and green chiles undrained
  • Ranch dressing mix
  • Cumin
  • Chili powder
  • Onion powder
  • Cream cheese

How To Make Our Slow Cooker Cream Cheese Chili Recipe:

To start this simple dinner recipe, start by getting out your slow cooker.

Then place the chicken in the bottom of the slow cooker.

Once the chicken is in the slow cooker, pour the drained and rinsed black beans, undrained corn, undrained rotel, ranch seasoning packet, cumin, chili powder, onion powder over top of the chicken.

After all of the seasonings are in the slow cooker, place the cream cheese on top of the chicken, you can leave it whole.

Then simply put the lid on the slow cooker and turn it on low for 6-8 hours.

When the chili is done cooking, make sure the chicken is at least 165 degrees, then turn the slow cooker to warm, stir in the cream cheese and shred the chicken with a fork.

After the chicken is shredded, stir everything together one last time, and then serve it with your favorite sides!

Shredding the Chicken

Once the chili is done cooking, you will need to pull out the chicken and shred it. To be honest, this was my least favorite part of making this chicken chili recipe. Between the fact that the chicken is super hot, and it took a while to get the consistency I wanted, I never looked forward to shredding the chicken.

That was until I came across Ambitious Kitchen’s post on easy ways to shred chicken. It has such great information, and saved me so much time. If you have a chance take a look.

Ingredients

  • 2 boneless, skinless chicken breasts

Instructions

  • Place chicken in bottom of slow cooker.

  • Combine beans, corn, Rotel, ranch seasoning, cumin, chili powder and onion powder and pour over chicken.

  • Place cream cheese on top.

  • Cover and cook on low for 6-8 hours.

  • Stir cream cheese into chili. Use 2 forks and shred the chicken. Stir together and serve.

    Made this tonight with hamburger instead of chicken (the comment above got me curious) and it turned out delish! I went ahead and browned my ground beef first and drained off the grease before putting it in the crockpot. Otherwise I followed the directions and cooked it on LOW for about 6 hours. Not sure if this is technically a Mexican dish, but we had it as a tortilla chip topping/dip and really liked it!

    In an airtight container it should be fine for 3 months.

    I made this last night and it was great! My husband and I both loved it. I'd like to make it for a church dinner soon. If I doubled or tripled the recipe, how long would it need to cook?

    If you double or triple the recipe you may need to use a big slow cooker. The will help it cook evenly by distributing the heat where it will be quite full. Just be sure your chicken is thoroughly cooked. You may just need to go an hour or so longer. Just depends on the chicken. With a big slow cooker it may not take any extra time at all. 6 to 8 hours on low.

    You will be fine with thawed chicken breasts. Reduce the length of time by an hour. Check to be sure they are not overdone.
