An easy chicken patties recipe made with cilantro, lime and scallions, bursting with fresh and exotic Thai flavors in every bite. This clean eating recipe has been ready for a few weeks now and I just couldn't wait to share it with you!

Chicken patties can sometimes be on the dry sidebut these healthy paleo chicken burger patties are definitely not. To make sure they stay super moist, I used a secret ingredient in my chicken patties recipe thatno onewill be able to spot unless you tell them.

Please welcome the camouflage's master...zucchini! Adding grated zucchini to the ground chicken mix will not only help the paleo burger patties to stay moist, it's also a very easy way to include more veggies in your diet without you or your kids even noticing.

When making this chicken patties recipe, I grated the zucchini very finely, using the smallest holes of my box grater, which made them almost undetectable in the fried patty.

You'll see that the meat mixture is very wet so you'll need to use wet hands to form the paleo chicken patties. However, they'll hold perfectly well when cooking. You can eat these healthy chicken patties warm or cold, as part of a healthy chicken burger or plain without the bun for a low carb paleo dinner.

Thai Chicken Patties with Sweet Chili Sauce

Ingredients

  • 1lbground chicken breast500 g
  • 1small zucchinipeeled and finely grated (makes about ½ cup, packed)
  • 1egg
  • 1tbsppacked fresh cilantrochopped
  • 1tsplime rindsfinely minced (about ¼ medium lime)
  • ½ limejuiced
  • 2tspfish sauce
  • 2scallions stalksgreen and white, finely chopped
  • 2tspolive oilmore if needed
  • ½cuphomemade sweet chili sauceor store-bought

Instructions

  1. In a large bowl, combine ground chicken, grated zucchini, egg, cilantro, lime rind and juice, fish sauce and scallion. Season lightly with salt.

  2. Use your wet hands to form 2 to 2.5 inch wide patties (you'll get about 8). The mixture will be quite runny but the patties hold together very well when cooking, no worries!

  3. Heat olive oil in a non-stick skillet over high heat. When hot, add about 4 patties, making sure you don't overcrowd the skillet. Reduce heat to medium-low and cook for 5 minutes.

  4. Flip patties and cook for another 5 minutes. You want to cook them gently, so they are brown on the outside and cooked all the way through on the inside.

  5. Repeat with remaining patties, adding olive oil if needed. Serve them warm or cold with sweet chili sauce.

      Hey Amy! Yes, you should be fine without eggs 🙂 I like to use chicken for this recipe because it doesn't have a strong flavor and lets the other ingredients shine but I reckon it should work with other meats as well. It might just be a little less "fresh" tasting than chicken, that's all. Hope you'll like them!

      It's hard to tell without testing myself and because it really depends on the size of the meatballs. If they're pretty small, I would say between 10 to 15 minutes - make sure they're thoroughly cooked in the center! Hope this helps 🙂
